Israeli Cous Cous

Hello friends.

It's been a busy few weeks. Full of healthy eating and exercise? Sadly, no. Full of alcohol and general laziness. Although, I do recommend Jillian Michael's exercise videos like Ripped in 30 and 30 Day Shred. They're challenging, but if you are feeling lazy and are in need of a quick workout, these will get you sweatin'.

Last week, I made a recipe that was fantastic. It was super easy, tasty, and healthy. It also lasted FOREVA. I mean, I still have some leftovers in the fridge. This could also be due to the fact that I went out for tacos and margaritas twice this week (what!?) and pretty much ate chips and dip and booze this weekend. The stripper at the bachelorette party may have inhibited my appetite somewhat. This did not stop me from stuffing my face full of salt and vinegar chips, Scotcharoos, and gummy bears. Hopefully I'll be able to fit into my bridesmaid dress come June.

Now something that I try to do, is go to the grocery store as much as possible and spend as much money as possible. Wait. No. Opposite (I know..I'm so funny I should definitely be on Saturday Night Live, which has been a lifelong dream I still plan on achieving). I try to make one big grocery trip every other week, and make ingredients last into the next week. I'll supplement the next week with leftovers, lean cuisines, pasta/rice with a veggie, or Morning Star veggie burgers. Sometimes I'll make exceptions to pick up necessities. Like yogurt, fresh fruit/veggies, and desserts for my friend's birthday, which thank goodness is Wednesday.  I have an idea for what I should make him, which I will not disclose here, but it is experimental. I am open to any ideas, so feel free to leave a link to your favorite dessert.

In the next couple weeks I will be drowning in reports, research papers, and portfolio stuff. But, as always, food is what gets me by. I will do my best to post the fantastic recipes that I am already dreaming of for the next few weeks, which will probably include pesto polenta cakes and mediterranean farro salad. Also, Steve and I will be celebrating our 3 year anniversary on Tuesday, so my mind is buzzing with restaurant ideas. I will keep you posted!

Thai Peanut Crack Noodles...


Hey there bloggers! And followers...and everyone. This is a judgment free zone. I know it's been awhile, but I was studying for my Praxis exam aka hell on earth. AKA not sure I passed so I will keep you updated. I enjoyed celebrating after it was done however...

Also, Steve's brother Kevin and his girlfriend Bri matched together for Ohio State for their residence next year! Very exciting. However, it did remind me that time is FLYING, as they will be moving to Ohio in like 2 months..yikes! I have also been watching an unhealthy amount of old Saturday Night Live episodes, and am thinking about dropping out of school to join the show. This would be much easier if I was funny. In other news, my friend Tiffani is traveling all around the Dominican Republic for Peace Corps, and I am stuck here trying to change the lives of urban youths (shout out to new girl). So a little bit jealous...love you Tiff.

I would be more jealous however, if it wasn't so darn gorgeous out. This has led to much exercising outside, aka running. Here is a quick at-home exercise that I have been trying recently after about 45 minutes of running outside.

Circuit:
80 jumping jacks
50 leg crunches
20 sit-ups
15 tricep dips
20 squats
15 side lunges (per leg)
50 bicycle crunches
15 push-ups
40 russian twists

Repeat it as many times as you like, feel free to add or subtract reps, and change the weight up if you like. I like these shorter circuits because you go through them quickly, and it targets multiple muscle groups.

Onto the food!! I've made some pretty delish recipes. On Monday night, Steve and I made a sweet potato cream pasta with crispy kale. I was really surprised at how much I enjoyed the flavor combination. Though it's a bit starchy, it was very easy, and made me realize that it would be cheap/fun/yummy to make crispy kale chips as a snack. You'd be surprised at how crunchy these suckers get.

A few weeks ago, I made another dish that I will refer to as crack cocaine. It was seriously SO good and SO easy and I want to make it everyday and you should make it tonight or else. Treats!

Hello everyone! I'm pretty impressed with myself that I've posted an entry once a month since....last month. I'm impressive...people should consider giving me awards and showering me with affection and goods.

Speaking of goods and treats and the title of this post, I have some delicious recipes to share! However, I've created a new policy for this blog...I am going to start just giving everyone the link of my tasty treats, so that I am not murdered in the middle of the night for copying other people's recipes. When I have time to create my own original recipes more frequently, like when I'm 67, than I will provide all the good stuff right here. Until then, I'll be respectful of others because I play nice. Sort of.

So, one of my friend's had a birthday this past month...this was a wonderful excuse for my roommate's and I to stay in on a Friday night, drink wine, and bake. Although in this case, it was more of a freezing/refrigerating with some mixing and microwaving involved. We made two recipes that I have been DYING to try from Pinterest, which I would not advise anyone to get addicted to I mean join. As I lay in the fetal position from withdrawals (not really because I always give in), I curse the day anyone sent me an invite to that wretched site. Just kidding. Not really.

They went over VERY well with the birthday crowd. One little thing: I don't like white chocolate as much, so I put some of the frozen banana chocolate peanut butter sauce on a few of the truffles....MUCH better. However, those that do indulge in white chocolate said they were good, so whatever your preference I guess. But if you like white chocolate your preference sucks. So do you. Maybe not. Maybe.

Also, definitely add the coconut flakes to the bananas when the chocolate is still wet, mistake #1 Cate Reynolds. My roommate gently encouraged me to put them on after we noticed the chocolate was drying...many expletives could be heard from the kitchen and there are coconut flakes littered all over our freezer.

I don't mean to overload you with recipes, but I don't know when the next time I'll be able to post will be...so why not? I'm taking the Praxis test next weekend (barf) so will be devoting a lot of time to studying, slash watching Hulu and dreaming about desserts (which I gave up for Lent, mistake #2 Cate Reynolds).

This recipe NEEDS to be shared. Again, a recipe from Pinterest. It looked so appealing in the picture that I couldn't resist, plus I have a love for avocados that could challenge my love for any human being. These are sweet potato burgers, and I only used 1 can of cannellini beans to modify the recipe a bit. I also ate the burgers over some spinach, with avocado and a little oil and balsamic vinegar. Lastly, it was my boyfriend's 25th birthday this past week, and he picked out these OUTRAGEOUS cupcakes for me to make. He likes to surprise me with extravagant and demanding tasks...last year on his birthday, I asked if he would like me to make him a special birthday breakfast. I was expecting eggs and toast, or chocolate chip pancakes. His response: "Umm..like maybe some blueberry stuffed french toast?".....
..................
................................Get real. It turned out HORRIBLY but him and his brother politely lied to my face and said it was good at the time. I guess we'll find out next year what he really thought of these cupcakes. They are cinnamon streusel french toast cupcakes with maple buttercream frosting. He's fancy. It was quite torturous to make them since I gave up dessert for Lent, so I accidentally ate half a cup of batter and proceeded to feel sick the rest of the night. Ahh...emotional eating.

I did struggle with the frosting, but only because I don't have an electric mixer at my apartment. So I used this ANCIENT hand mixer that was sent from my Grandpa's house...however it doesn't work...at all. Again, many expletives heard from the kitchen (like, "shit on a shingle", Steve's Mom's favorite phrase) and a frantic call to Steve to see if I could transport the frosting to his place. Good thing it wasn't a surprise.

Healthy Pizza?!?!


Hello everyone! So I decided to make pizza that was healthy, with a cauliflower crust. I did not foresee the cup and a half of mozzarella cheese, but yet...still healthy...I hope. I also decided to switch my blog up a bit, and include a little exercise piece :) I usually go to boot camp classes at the UWM gym, and like to do Jillian Michaels videos at home. However, when I do go workout at the gym, I like to do some of the workouts I've found on Pinterest (which is crack by the way). So here is what I try to do once or twice a week to supplement other workouts:







Pinterest Workout:

20 minutes cardio (I usually choose to run)
20 chest press
20 tricep dips
20 bicep curls
20 donkey kicks each leg
20 squats with weights
20 hip raises
20 ab twists, each side

Sorry if this is boring to you, just thought I would share in case there are some fitness peeps out there! I certainly am no expert, so any advice or suggestions are welcome.

Besides this pizza, there is nothing really new. I tried making healthy banana bread which backfired. I thought, oh mah goodness, applesauce and honey instead of butter and sugar!? GREAT! Sometimes, this means no taste. In this case, my dry lump of flavorless bread did not work out so great, so I will choke it down as I dream up other tasty treats (with sugar).





Cauliflower Pizza!


What ya need:

1 cup cooked, riced cauliflower


1 cup shredded mozzarella cheese


1 egg, beaten


1 tsp dried oregano


1/2 tsp crushed garlic


1/2 tsp garlic salt


olive oil (optional)

pizza sauce, shredded cheese and your choice of toppings*


What ya do:

Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the now “riced” cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.

One large head should produce approximately 3 cups of riced cauliflower (PLEASE PLEASE PLEASE make a note of this. I had to throw out extra cauliflower at the end of the week because I did not realize you only needed 1 cup per serving. Unfortunately, not reading the recipe thoroughly is one of my downfalls). The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

To Make the Pizza Crust:

Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.

In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.

Bake at 450 degrees for 15 minutes.

Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

Light and flavorful!


Hello bloggers,

Oh yes..I know that I often have cheesy titles, but one of these recipes is actually a cheesy dish. Win, win. I hope you guys are having a good week...I'm usually no complainer but I'm having quite a craptastic one, so these tasty meals helped. Also, I have been watching way too much Friday Night Lights, so be weary of me throwing down the "ya'll" anywhere in this here blog. I've also been watching The League (way too much TV watching), which is frightening because I feel like I actually may be starting to like football a little bit not sure not really maybe. So instead of overdosing on fantasy football jargon, I went over to my LOVELY friend Laura's apartment and overdosed on peach bellinis instead. Whoops. Anyways, these two recipes are the result of a weekend of TV watching and wondering why celebrities choose to give themselves so many awards.



Cheesy Quinoa Cakes


What ya need:


2 cups cooked, cooled quinoa (about 1 cup uncooked will yield 2 cups cooked)


2/3 cup grated Parmesan cheese


2 tablespoons all purpose flour


2 green onions, thinly sliced


1-2 cloves garlic, minced


1 egg, lightly beaten


1/3 cup Panko bread crumbs


1/2 teaspoon freshly ground black pepper


Dash of cayenne pepper


Salt to taste


3 tablespoons extra virgin olive oil


What ya do:


*Place all ingredients, except for the oil, into a mixing bowl and stir together until well combined. Season with salt and allow the mixture to sit for 5 minutes.


*Heat oil into a large sauté pan over medium heat. Form ¼ cup patties with the quinoa mixture and place in the heated sauté pan, 3 or 4 at a time.


*Cook quinoa cakes for 3-5 minutes on each side, until golden brown. Repeat with the remaining patties until all of the cakes have been cooked.



Balsamic Mushroom Gnocchi

(copied from my favorite blog, www.howsweeteats.com)



What ya need:


1 pound gnocchi (fresh or packaged)


3/4 cup balsamic vinegar


1/2 sweet onion, chopped


1/2 cup chopped mushrooms


3 tablespoons garlic basil butter (1/4 cup softened butter, 1 tsp chopped basil, 1 tsp minced garlic, combine ingredients!)


What ya do:

Heat a small saucepan over high heat and add balsamic vinegar. Allow vinegar to come to a boil them immediately reduce to a simmer. Simmer until vinegar reduces by half of the amount – about 8-10 minutes. Set aside and let cool.


Heat a skillet on medium-low heat and add 1 tablespoon garlic butter. Add chopped peppers, onions and mushrooms and saute until soft, about 5 minutes. While veggies are cooking, boil water for gnocchi and cook according to directions – they only take a few minutes, so make sure the veggies are almost finished cooking.


Drain gnocchi and add to veggies in skillet. Add vinegar reduction and garlic butter and stir to combine. Top with parmesan if desired. Serve and devour!

A few of my favorite things.

Happy 2012! I have no excuses but to apologize for my absence during the semester from Hell. Although I have not posted in a number of months, no need to fret. I have still been cooking up a storm. I just have not taken pictures, or blogged, or done anything remotely to document it. But, I am back with a string of my Mom's old recipes and three new cookbooks from Christmas. Also, a schedule that is not quite so jam packed.

So while my camera charges and my mind buzzes with new recipes, I have listed a few of my favorite recipes from the last few months. Armed with a new lettuce spinner, fondue pot, and avocado peeler, I can tell 2012 is going to be a good year.


1. Oatmeal Nutella Cookies- I brought these to a party earlier in the fall and they were a BIG hit. By BIG hit, I mean that I ate the majority of them. I guess other people liked them too.


What ya need:

1/2 cup unsalted butter, room temperature

1/2 cup white sugar

1/2 cup firmly packed brown sugar

1/2 cup Nutella

1 large egg

2 tsp vanilla

1 cup all purpose flour

1 cup quick cooking oats

1 tsp baking soda

1/4 tsp salt

What ya do:

Preheat oven to 350 degrees.

In a small bowl, whisk together flour, oats, baking soda, and salt.

Using a mixer, cream butter until smooth, about 1 minute. Add in white and brown sugar and cream until light and fluffy. About 3-4 minutes.

With mixer on low speed, add in the egg and vanilla. Then add the Nutella. Mix until well incorporated.

Slowly add in the dry ingredients and mix until incorporated. Increase speed to medium and mix until well combined.

Refrigerate dough for about 20- 30 minutes.

Scoop dough using cookie scoop, and spread about 2 inches apart. Bake for about 7-9 minutes, or 6-7 minutes if dough was not refrigerated.

2. Lemon Fusilli with Arugula

What ya need:

1 tablespoon olive oil

1 tablespoon minced garlic (2 cloves)

2 cups heavy cream

3 lemons

Kosher salt and freshly ground pepper

1 pound dried fusilli pasta

½ pound baby arugula (or 2 bunches of regular arugula, stems removed and leaves cut into thirds)

½ cup freshly grated Parmesan cheese

1 pint grape or cherry tomatoes, halved

What ya do:

Heat the olive oil in a medium saucepan over medium heat. Add the garlic and cook for 60 seconds, then add the cream, the zest and juice of 2 lemons, 2 teaspoons salt and 1 teaspoon pepper. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until it starts to thicken.

Bring a large pot of water to a boil, add 1 tablespoon salt and the pasta and cook al dente according to the directions about 12 minutes, stirring occasionally. Drain the pasta and return to pot. Immediately add the cream mixture and cook over medium-low heat for 3 minutes until the pasta has absorbed most of the sauce. Pour the hot pasta into a large bowl and add the Arugula, Parmesan and tomatoes. Cut the last lemon in half lengthwise, slice it 1/4 –inch thick crosswise and add a few slices to the pasta. Toss well, season to taste and serve hot.

3. Our Sweet Cate’s Favorite Chicken Piccata (Okay, my Mom wrote this...)

What ya need:

4 split (2 whole) boneless, skinless chicken breasts

Kosher salt and freshly ground pepper

1 cup all-purpose flour

2 extra-large eggs

1 ½ cups seasoned dried bread crumbs

Good olive oil

3 tablespoons unsalted butter, at room temperature

1/3 cup freshly squeezed lemon juice (2 lemons)

Lemon halves reserved

½ cup dry white wine

Sliced lemon, for serving

Chopped fresh flat-leaf parsley

What ya do:

Preheat oven to 400. Line a sheet pan with parchment paper.

Place each chicken breast between 2 sheets of parchment paper or plastic wrap and pound it out to ¼-inch thick. Sprinkle both sides with salt and pepper.

Mix the flour, 1 teaspoon salt, and 1/2teaspoon pepper on a shallow plate. In a second plate, beat the eggs and 1 tablespoon water together. Place the bread crumbs on a third plate. Dip each chicken breast first in flour, shake off excess, and then dip in the egg and bread-crumb mixtures.

Heat 2 tablespoons olive oil in a large sauté pan over medium heat. Add 2 chicken breasts and cook for 2 minutes on each side, until browned. Place them on the sheet pan while you cook the rest of the chicken. Heat more olive oil in the sauté pan and cook the second 2 chicken breast. Place them on the same sheet pan and allow them to bake for 5 to 10 minutes while you make the sauce.

For the sauce, wipe out the sauté pan with a dry paper towel. On medium heat, melt 1 tablespoon of the butter and then add the lemon juice, white wine, the reserved lemon halves, ½ teaspoon salt, and ¼ teaspoon pepper. Boil over high heat until reduced by half, about 2 minutes. Off the heat, add the remaining 2 tablespoons butter and swirl to combine. Discard the lemon halves. Serve one chicken breast on each plate, spoon on the sauce, and serve with sliced lemon and a sprinkling of fresh parsley.

Bon appetito.

4. White Wine Cake

(This is the best thing you will ever eat in your life)

What ya need:

Cake

1 box yellow cake mix (without pudding)

3.4 oz. Instant vanilla pudding mix

3/4-cup water

3/4-cup oil

1/2-cup wine (Gallo Rhine wine or any white wine)

4 eggs

1/4-cup brown sugar

1/4 cup white sugar

2 tsp. cinnamon

Pecan pieces (optional)

What ya do:

Mix everything together with mixer. If pecans are used, stir them in last. Cook at 325 degrees for 1 hour in a greased and floured tube pan.

What ya need:

Glaze

3/4-stick butter

3/4 cup white sugar.

1/4 cup wine

What ya do:

Boil and pour over cake immediately after it's taken from the oven. Let stand for an hour or more. Turn over onto cake plate.

Sprinkle with powdered sugar before serving.



5. Quinoa Lettuce Wraps (original recipe)

What ya need:

1/2 dry quinoa
1 cup water
1/2 cup yellow tomatoes
1/2 cup red onion
1 avocado
6-8 Lettuce leaves (Boston, Escarole, or Romaine)
1 TBL olive oil
1 TBL lemon juice
Salt and Peppa


What ya do:

Combine water and quinoa in a pot. Heat until boiling, and then cover and let simmer for 15 minutes (or until water is absorbed). Meanwhile, chop up onion, tomatoes, and avocado.

Once quinoa has absorbed all water, turn off heat and add chopped vegetables to quinoa. Whisk together olive oil, lemon juice, and salt. Add to quinoa and mix well. Spoon quinoa mixture onto lettuce leaf wrap, and enjoy!

It's Fall, ya'll!

I don't usually say ya'll but it just felt right. I apologize. Not really. So blah blah I'm really busy blah blah but still cooking and baking blah blah. I'm the worst.

Here is a lovely recipe for delicious pumpkin oatmeal bars with a chocolate peanut butter frosting. It's super healthy with plenty of sugar. Certain to supply you with energy for raking leaves and carving pumpkins.


Also, I will be going on a haunted hay ride in the next couple weeks so will probably pee my pants. Unrelated, but still fall-like.





Pumpkin Oatmeal Bars

What ya need:

1/2 c peanut butter

1 c pumpkin puree

2 c oats (whole rolled, not quick cook)

1 c brown sugar, packed

1/2 c white sugar

1 tbsp pumpkin pie spice

1 tsp cinnamon

1 tbsp vanilla extract

1/3 cup peanut butter chips (you could also use anything else like chocolate chips..or something equally delicious)

What ya do:

*Combine all ingredients into a mixing bowl and stir by hand.

*Spread extremely moist batter into a foil-lined and spayed 8 x 8 or 9 x 9 pan. Bake at 350F for 22-25 minutes or until toothpick inserted in center comes out clean (we baked ours for extra, the consistency is going to be very soft and gooey..so don't worry you won't be poisoned and die).

*The bars may still look underdone, but that’s okay because they will continue to set up as they cool. Allow to cool before slicing.

*Suggestions for storage include the fridge or freezer if you like.


And now for the sugary goodness.

Chocolate Peanut Butter Frosting

What ya need:

1 c chocolate chips


1/4 c butter/margarine


1/4 c peanut butter


2 tbsp milk


1 tsp vanilla extract


1 c powdered sugar


What ya do:


*Melt chocolate chips in microwave.


*Add and stir in next four ingredients. After all ingredients have been incorporated, stir in the powdered sugar. Continue stirring or whisk together until smooth.


-After bars have cooled, spread frosting on top and refrigerate for a long long long time! Very yummy. May also eat with pumpkin ice cream, pumpkin spice lattes, or while hugging a pumpkin.
